Stuffed Chorizo

RECIPE INGREDIENTS
1 Package of Pederson's Natural Farms Chorizo
3 large bell peppers
1 onion, chopped
chives, chopped
4 eggs, scrambled
salt, pepper
onion salt
RECIPE DIRECTIONS
1. Cut the tops of the bell peppers and remove the seeds inside. Place to the side.
2. Preheat your oven to 350F.
3. Cook the Pederson's chorizo and about halfway through, add in the chopped onions.
4. Scramble the eggs and add the seasonings. Cook on a low heat until eggs are cooked through.
5. Place the bell peppers on a baking sheet and stuff with eggs and then the chorizo.
6. Bake the bell peppers for 15-20 minutes and top with chives.
Lastly, enjoy!
