Ingredients

1 package Pederson’s No Sugar Spicy Breakfast Sausage

2 large eggs

1/2 cup cherry tomatoes, halved

1/2 bell pepper (any color), diced

1/2 small onion, diced
Instructions

Dice the bell pepper and onion. Set aside.

In a skillet, brown the Pederson’s Spicy Breakfast Sausage. Remove from heat.

Crack the eggs into a bowl and whisk well.

Pour the eggs into a non-stick skillet over medium heat — think of this as your pizza crust.

Top with sausage, peppers, onions, and tomatoes while the eggs cook.

Let everything cook for 2-3 minutes until the eggs set and the toppings are heated through.
