Spicy Sausage Gravy

INGREDIENTS

Potatoes
1½ lb potatoes, cut into ½ inch cubes
2 tbsp ghee
1/2 tsp paprika
1/2 tsp sea salt
1/4 tsp ground black pepper

Sausage Gravy
1 9 oz package of Pederson’s Farms Spicy Breakfast Sausage Links
1 cup coconut milk
2 tsp arrowroot starch
1/4 tsp ground black pepper

DIRECTIONS

1. Preheat oven to 400 degrees F. Toss the potatoes with ghee, paprika, salt, and pepper. Place on a baking sheet in a single layer and bake for 20-25 minutes, flipping halfway through. If you want them to crisp up more, broil for 4-5 minutes after.

2. While the potatoes are roasting, use a knife or a food processor to mince the sausage links into tiny pieces. Set aside.

3. Whisk together coconut milk, arrowroot starch, and pepper, and pour into a large pan.

4. Heat the pan over medium heat, and let the coconut milk mixture simmer for 3-4 minutes until thickened.

5. Add the sausage into the pan, stir together, and simmer for about 5 minutes until the flavors meld together.

6. Serve the spicy sausage gravy over roasted potatoes.
