Primal Piggies in a Blanket
INGREDIENTS
12 ounces Pederson’s Farm Hot Dogs
½ cups low moisture shredded mozzarella
2 tablespoons cream cheese
1 cup almond flour
¼ cup ground up pork rinds
1 teaspoon garlic powder
½ teaspoon fine salt
1 large egg
1 tablespoon avocado oil or melted butter
1 teaspoon sesame seeds
DIRECTIONS
Preheat oven to 400F. Line a baking sheet with parchment paper.
Cut your hotdogs into 3 even pieces. Set aside.
In a medium bowl combine the mozzarella and cream cheese. Microwave for 90 seconds.
Use a spatula to mix it all together for a few seconds to cool a bit then mix in the flour, pork rinds and seasonings. Mix well until it’s thick.
Microwave for 20 seconds. Use spatula to mix again, it should be very pliable and mix in the egg until it creates a smooth dough.
Make a dough ball and cut it into 15 pieces. Set the pieces in a bowl and cover to keep warm, the dough is easier to work with when a little warm, if at any point it gets too stiff, just microwave it for a few seconds.
Roll each piece of dough into a 5-6-inch tube, gently flatten and wrap around a piece of hotdog, place on the sheet pan. Repeat with all of the dough.
Brush the pigs in a blanket with melted butter or avocado oil and sprinkle with sesame seeds.
Bake for 20 minutes or until golden. Remove from the oven and serve hot!
