Street Smart Pork Tacos

Ingredients

For the pork
2 lbs Pork Boneless Shoulder Roast
1 tsp garlic powder
½ tsp cumin
1 small white onion (sliced)
¾ red onion (sliced)
2 cups chicken bone broth (compliant)
For the Salsa
1 mango
1 small red bell pepper
¼ red onion
¼ bunch of cilantro
For the Taco shells
1 Butternut squash

Directions

For the Pork

Turn insta pot on “saute” setting

Mix seasonings and coat the roast

Seer each side for 2-3 min

Turn the pot to “manual” 20 minutes

Add in the onions and broth
Cover and let cook
When finished let it naturally depressurize

Cover and let cook

For the Salsa

Finely dice all ingredients

Mix together and set aside

For the Taco Shells

Peel skin off the squash using a potato peeler

Turn squash on its side and cut into thin rounds

Place them on a foil lined baking sheet

Brush them all with olive oil and sprinkle with salt

Cook on 400* F for 20 min

Let cool and serve them under a pile of delicious meat and topped with salsa! Enjoy!
