Roasted Brussels Sprouts & Ham with Sweet Mustard Drizzle

1 cup Pederson's Farms Smoked Ham, sliced thin, in small pieces
8 tbsp olive oil, divided
2 pounds fresh Brussels Sprouts, trimmed and halved
1 cup sweet onion, diced
1 ½ tsp sea salt
½ tsp garlic pepper
For the Mustard Drizzle
1 ½ tbsp Primal Kitchen spicy brown mustard
1 ½ tbsp pure maple syrup, or raw honey
Small pinch of salt & pepper
Directions
Instructions
First, mix together drizzle ingredients and then set aside.
Next, sauté ham in 3 tbsp olive oil over medium heat for about 4 minutes, or until slightly browned. Set aside.
Preheat oven to 425 degrees. In a large bowl, toss together brussels, salt, garlic pepper and diced onion together with 5 tbsp olive oil. Spread on a large baking sheet and bake for 20-25 min.
Toss together with ham, and drizzle with sweet mustard sauce. Serve immediately. Enjoy!
