Potaje de Garbanzo
(Chickpea Stew)
INGREDIENTS
2 tablespoon extra virgin olive oil
1 vidalia onion, diced
2 medium carrots, diced
2 ribs celery, diced
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon ground black pepper
½ teaspoon oregano powder
2 bay leaves
1 Pederson’s Sugar Free Old World Kielbasa or Chorizo, diced
Juice of 1 lemon
½ cup tomato sauce
1 can garbanzo, drained
1 ½ cup bone broth
¼ cup red wine
2 tablespoon cassava flour
Salt to taste
Limes to serve
DIRECTIONS
1. Heat a medium sized pot over medium heat.
2. Drizzle in the oil and add the onion, carrots, celery, seasonings and bay leaf. Cook until tender and aromatic, stirring frequently.
3. Add in the diced kielbasa or chorizo. Saute until browned.
4. Deglaze the pot with the lemon juice.
5. Add in the tomato sauce and chickpeas (garbanzos) and stir well.
6. Add in the bone broth and red wine and bring to a simmer.
7. Once the soup has been simmering for 15 minutes, skim 1 ladle of hot broth off the top and put it in a mug, add in the cassava flour and mix vigorously with a fork to create a slurry.

Cristina Maria Curp is a proud mother and military spouse and the founder of the popular food blog The Castaway Kitchen. She also authored two cookbooks, Made Whole and Made Whole Made Simple, and is the co-host of the “Body Wise” Podcast. Cristina, the daughter of Cuban immigrants, grew up in Miami.
