Lemon Herb Bacon-Wrapped Asparagus

INGREDIENTS

  • 1 package Pederson’s Farms Bacon
  • 1 bunch asparagus, trimmed
  • 1 lemon, zest and juice
  • 2 tbsp olive oil
  • 1 tsp fresh thyme
  • Salt & pepper to taste

INSTRUCTIONS

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix olive oil, lemon zest, lemon juice, thyme, salt, and pepper.
  3. Wrap each asparagus spear with a slice of Pederson’s Farms Bacon and place on the prepared baking sheet.
  4. Brush the bacon-wrapped asparagus with the lemon herb mixture.
  5. Roast in the oven for 15-20 minutes, or until bacon is crispy and asparagus is tender. Serve warm.
