KIELBASA RAINBOW SHEET PAN
For Sheet Pan:
1 large summer squash,
sliced ½ red onion,
sliced 5 radishes,
quartered ½ red cabbage,
sliced 1 Pederson’s Farm Sugar Free Kielbasa, thick sliced
½ teaspoon fine salt
1 tablespoon avocado oil
3 tablespoons Whole30 compliant mayo
2 tablespoons coconut aminos
2 tablespoons almond butter
Juice of 1 lemon
Prep Time: 10 minutes
Cook time: 35-40 minutes
Preheat oven to 400F.
Arrange all of your vegetables on a sheet pan. Then arrange your slices of kielbasa over the vegetables and in the spaces between.
Sprinkle everything with salt and drizzle with avocado oil. Roast for 35-40 minutes.
While it cooks makes the sauce; whisk together the ingredients in a small bowl until smooth.
Remove the sheet pan from the oven, garnish with fresh herbs, if you have some and drizzle with sauce!
