Hidden Veggie
Tailgate Chili

INGREDIENTS

With FIVE hidden veggies, you’ll never believe this tailgate favorite is as healthy as it is delicious!
 
1 pound Pederson’s ground beef
2 tablespoons olive oil
28 ounces crushed tomatoes
2 cups chopped carrots
2 cups riced cauliflower
1 red pepper, chopped
1 onion, chopped
2 sweet potatoes, peeled and chopped
2 tablespoons chili powder
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon black pepper
½ teaspoon cumin

DIRECTIONS

1. Saute the beef and the oil in your Instant Pot (using the saute feature) for 3-5 minutes.

2. Add in the veggies and seasonings as well as the crushed tomatoes. Stir to combine and secure the lid and pressure valve. Press the “Chili” button and allow the chili to cook.

3. Release the pressure valve once the cooking cycle is complete.

4. Remove the lid and garnish with avocado, Whole30 compliant sour cream, fresh cilantro and chopped red onion if desired.
