Grilled Pork Chops with Fresh Herb Chimichurri

INGREDIENTS

  • 4 Pederson’s Farms Bone-in Pork Chops
  • 2 tbsp olive oil
  • Salt & pepper to taste
  • 1 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup red wine vinegar
  • 2 cloves garlic, minced
  • 1/4 tsp red pepper flakes
  • 1/2 cup olive oil

INSTRUCTIONS

  1. Preheat the grill to medium-high heat. Brush Pederson’s Farms Pork Chops with olive oil and season with salt and pepper.
  2. Grill the pork chops for 6-7 minutes on each side, or until the internal temperature reaches 145°F (63°C). Remove from the grill and set aside.
  3. In a bowl, combine parsley, cilantro, red wine vinegar, garlic, red pepper flakes, and 1/2 cup olive oil. Stir to combine.
  4. Spoon the chimichurri over the grilled pork chops and serve with your favorite side dish. Enjoy!
