The Best Chocolate Bacon Cookies
1 1/4 Cup of Almond Flour
1/4 Cup Unsweetened Shredded Coconut
1/4 Cup B Grade Maple Syrup
2 Slices Sugar Free Bacon (Cut into small pieces and fried)
3 Tbsp. Grass Fed Butter
2 oz. 80%+ Organic Dark Chocolate (Crushed)
Coarse Sea Salt
Preheat the oven the 350F. Line the baking tray with baking paper and place to one side.
Makes 18 Bites
Using a food processor, add the flour, butter, maple syrup and coconut and pulse until it resembles cookie dough. Place the dough in a bowl and using your hands mix in the crushed chocolate and bacon pieces.
Form a ball with 1 tablespoon of dough and flatten on the baking tray, making sure to leave a space between each of the 18 bites.
Bake for approximately 10-12 minutes before removing from the oven. Sprinkle a little sea salt on the bites and allow to the tray to cool and the bites to firm up (approximately 30 minutes).
Store in an airtight container in the fridge.
