Easy Paleo Pork Chops with Grilled Peach Salsa

INGREDIENTS

For the Pork Chops

  • 4 Pederson's boneless pork chops (at least 1-inch thick)
  • 2 tsp chili powder
  • 2 tsp allspice
  • Salt and pepper to taste

For the Grilled Peach Salsa

  • 2 peaches, pitted and halved
  • 2 tsp avocado oil
  • 1/2 red onion, diced
  • 1 plum tomato, diced
  • 2 tbsp chopped cilantro
  • 1 tbsp lime juice
  • 1 tsp extra virgin olive oil
  • Salt and pepper to taste

INSTRUCTIONS

  1. Preheat the grill to medium-high heat.
  2. Season the pork chops all over with chili powder, allspice, salt, and pepper.
  3. Brush the cut sides of the peaches with avocado oil.
  4. Place the pork chops and peaches (cut side down) on the grill. Cover the grill.
  5. Grill the peaches for about 5 minutes, then remove them from the grill and set aside to cool. Continue grilling the pork chops for 4-6 minutes per side, or until they reach an internal temperature of 145°F.
  6. Let the pork chops rest for 5 minutes.
  7. While the pork rests, dice the grilled peaches and combine them in a bowl with the red onion, tomato, cilantro, lime juice, olive oil, salt, and pepper. Mix well to create the salsa.
  8. Serve the pork chops with the grilled peach salsa spooned on top or on the side.
