INGREDIENTS

  • 1 tbsp ghee (or preferred cooking fat)
  • 1 pkg Pederson’s pork stew meat
  • 1 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 3 carrots, chopped
  • 3 stalks celery, chopped
  • 1 lb potatoes, cubed
  • 2 tbsp tomato paste
  • 4 cups bone broth or beef broth
  • 1 tsp dried thyme
  • 1/4 cup arrowroot starch
  • 1/4 cup water
  • Chopped parsley, for garnish

INSTRUCTIONS

  1. Turn the Instant Pot to Sauté mode and add the ghee.
  2. Season the pork stew meat evenly with sea salt and black pepper.
  3. Once the Instant Pot displays “HOT,” add the pork and sear for 4-5 minutes until lightly browned on all sides.
  4. Add the onion and garlic to the pot and sauté for 2 minutes, until fragrant.
  5. Turn off the Instant Pot. Add the carrots, celery, potatoes, tomato paste, bone broth, and thyme. Stir to combine.
  6. Secure the lid and set the pressure valve to Sealing. Cook on Manual HIGH for 30 minutes.
  7. Once cooking is complete, allow the pressure to naturally release for 15-20 minutes, until the lid opens easily.
  8. Turn the Instant Pot back to Sauté mode.
  9. In a small bowl, whisk together the arrowroot starch and water to create a slurry. Pour into the stew and stir.
  10. Simmer for 2-3 minutes, until the stew thickens to your desired consistency.
  11. Taste and adjust salt if needed. Garnish with fresh parsley before serving.
