Chili Lime Paleo Pork Ribs

INGREDIENTS
2 lbs Pederson’s baby back ribs
1 tbsp avocado oil
1 tbsp chili powder
1 tsp paprika
1/2 tsp garlic powder
(omit for low FODMAP)
1/2 tsp sea salt
1/4 tsp ground black pepper
1/4 tsp cayenne pepper
Zest of 2 limes
INSTRUCTIONS
Preheat the oven to 300°F.
Rub the ribs all over with avocado oil.
In a small bowl, combine chili powder, paprika, garlic powder (if using), sea salt, black pepper, cayenne, and lime zest.
Sprinkle the spice mixture generously over the ribs, pressing it in to evenly coat all sides.
Place a roasting rack over a baking pan. Arrange the ribs on the rack.
Bake for 2.5 to 3 hours, until the ribs are tender and juicy on the inside with a crisp, flavorful crust on the outside.
Let rest briefly, then cut into sections before serving.
