Made with Pederson’s Duroc-Sired Ground Pork

Ingredients

1/2 lb (8 oz) Pederson’s Ground Pork

2 large eggs

1/2 cup cherry tomatoes, halved

1/2 bell pepper (any color), diced

1/2 small onion, diced

1/2 tsp garlic powder

1/2 tsp smoked paprika

Salt & pepper to taste
Instructions

Dice the bell pepper and onion. Set aside.

In a skillet over medium heat, cook the ground pork until browned, breaking it up as it cooks. Season with garlic powder, smoked paprika, salt, and pepper. Remove from heat.

Whisk the eggs in a bowl.

Pour eggs into a non-stick skillet over medium heat — this acts as your “pizza crust.”

While the eggs cook, top with cooked pork, peppers, onions, and tomatoes.
