Bacon Breakfast Salad

RECIPE: Bacon Breakfast Salad

INGREDIENTS:
  • 4 Slices of Pederson's No Sugar Bacon
  • Lettuce or spinach (you pick)
  • 2 Eggs
  • Toppings of your choice
FOR THE DRESSING:
  • 1 garlic clove
  • 1 tbsp dijon mustard
  • 2 tbsp red wine vinegar
  • 3 tbsp Olive Oil
    INSTRUCTIONS:
    1. Cook bacon
    2. Boil eggs, peel, and cut in fourths
    3. Prepare lettuce or spinach
    4. For the Dressing
    5. Mince the garlic, add a touch of salt, and work into a paste
    6. Next add garlic, dijon, and red wine. Whisk well.
    7. Now, slowly add the olive oil to the mixture continuing to whisk
    8. When finished, pour over salad and enjoy!
