Bacon And Veggie Sweet Potato Hash Recipe

Ingredients

INGREDIENTS
2 Large Organic Sweet Potatoes
2 cups Tuscan Kale
1 Bell Pepper
1 Green Onion
3 Eggs

Directions

INSTRUCTIONS

Place strips of bacon in skillet, once fully cooked remove from skillet

Cut up sweet potatoes and veggies, mix and place in skillet

Put stove on medium/high until sweet potatoes are softened (12-15 min)

Preheat oven to 425

Once sweet potatoes & veggies are soft, cut up bacon and mix in with the rest

Crack eggs on top of everything and place in the oven

Check occasionally until eggs are cooked to preference
