WHOLE30 Deli Meat Sushi Style

 8 slices of Pederson’s Farms deli meat of your choosing
 1 small cucumber, shredded
 1 avocado, pitted, peeled and sliced into 16 pieces
 1 purple onion, sliced into thin strips
 1 red bell pepper, sliced into thin strips
 1 orange bell pepper, sliced into thin strips

Lay a piece of deli meat on work service. Arrange a small handful of the veggies: bell peppers, onion, and cucumber along the bottom third of the deli meat.


Lay 2 slices of avocado over top. Starting from the bottom, roll tightly to enclose the veggies.


Lay the roll seam-side down and cut into 6 pieces.


Repeat with the remaining slices of deli meat and veggies.
