SPICY BREAKFAST SAUSAGE & SWEET POTATO SPIRALS SHASHUKA

Ingredients

  • 1 Package - VEGGIE NOODLE CO. SWEET POTATO SPIRALS
  • 1 Package - PEDERSON’S FARMS SPICY BREAKFAST SAUSAGE
  • 1 MEDIUM SWEET ONION, DICED
  • 2 tbsp OLIVE OIL
  • 1 LARGE GARLIC CLOVE, MINCED
  • 6 FRESH TOMATOES, DICED
  • 1 tsp GROUND CUMIN
  • 1 tsp PAPRIKA
  • 1 pinch SALT
  • 4 EGGS
  • 4 oz FRESH SPINACH

Directions

Heat skillet to medium heat and sauté onion in olive oil until soft and translucent.

Add in minced garlic and cook for thirty more seconds.

Add in Pederson’s Farms Spicy Breakfast Sausage with fresh tomatoes, cumin, and paprika.

Using a wooden spoon, break up the sausage and cook until reduced slightly.

Add in Veggie Noodle Co. Sweet Potato Spirals and sauté for four minutes.

Make four wells in the top of the sauce and pour an egg into each well.

Cover with spinach and turn heat to low.

Place a lid on the pan and let sit for ten minutes or until the egg whites have set and the spinach is wilted. Salt and pepper to taste, and enjoy!
