Bacon Green bean casserole

 4 slices Pederson's Natural Farms bacon
 ½ cup yellow onion, chopped
 2 cloves garlic, minced
 12 ounces button mushrooms, chopped
 3 Tbsp. butter
 3 Tbsp. flour
 1 cup half-and-half
 1 cup chicken broth
 ½ cup white cheddar cheese, shredded
 ¾tsp.salt
 ¼ tsp. pepper
 1 pound fresh green beans, trimmed and halved
 1 can French fried onions

Preheat your oven to 350 degrees F. Boil green beans for 5 minutes. Immediately soak in ice water for 3 minutes, then drain and set aside.

Chop the bacon into chunks and then cook in a large frying pan until crispy. Add the onions, and cook over medium-high heat for 4-5 minutes. Add the mushrooms and garlic, and cook for on additional
4-5 minutes.

Remove mixture from frying pan.

Add the butter to the frying pan and whisk in the flour. Continue whisking for 2 minutes until the mixture has a darker color. Pour in the half-and-half and chicken broth and whisk. Add the cheese, and stir until melted.

Pour the bacon/mushroom mixture bock in to the pan, and odd salt and pepper to taste. Simmer for 2-3 minutes, then add the green beans, and mix well.
Transfer the mixture into a casserole dish, and top with the French fried onions. Bake for 30 minutes. Serve and enjoy!
