Sautéed Swiss Chard
with Fresh Pork

RECIPE INGREDIENTS

1/2 lb Pederson’s Farms pork tenderloin
Salt and pepper, to taste
1 lb Swiss chard
2 tbsp ghee, divided
4 garlic cloves, minced
1/8 tsp red pepper flakes, or more to taste
1/8 tsp sea salt
1/8 tsp ground black pepper
1 tbsp apple cider vinegar
1 tbsp coconut aminos

RECIPE DIRECTIONS

1. Put pork tenderloin in the freezer for 15 minutes, then remove. This helps so you can thinly slice the pork to about 1/8 inch in thickness. Lightly season with salt and pepper and set aside.

2. Remove the stems of the Swiss chard and discard. Cut the leaves into strips.

3. Heat 1 tbsp of ghee in a large skillet over medium high heat. Add pork slices in a single layer, then cook for 1 minutes on each side. Remove from the skillet and set aside.

4. Add another tbsp of ghee to the skillet, then add garlic and red pepper flakes. Cook for 1 minutes until fragrant.

5. Add Swiss chard leaves, salt, and pepper and cook stirring for 3 minutes until cooked down to about half.

6. Add apple cider vinegar, coconut aminos, and cooked pork. Reduce the heat to medium low and stir together for another minute until the chards wilted and the pork is heated through. Serve warm.
