Pork Tenderloin on
Sweet Potato Bun

RECIPE INGREDIENTS

1 Pederson’s Farms Pork Tenderloin
(1-1½ lbs)
2 tbsp extra virgin olive oil, divided
½ apple, grated
1 tbsp dijon mustard
1 tsp sea salt
½ tsp ground black pepper
2 medium sweet potatoes

Optional Toppings:
Mayonnaise

Lettuce
Sliced tomato
Pickles
Sliced onions

RECIPE DIRECTIONS

1. Slice the pork tenderloin into ¾ inch slices.

2. Combine 1 tbsp of olive oil, apple, dijon mustard, salt, and pepper until a paste is formed. Coat and massage the meat on all sides. Cover and refrigerate for 2 hours to overnight.

3. When ready to cook the burgers, preheat the oven to 425 degrees F.

4. Slice the sweet potatoes into ½ inch rounds, and place on a baking sheet in a single layer. Roast for 20 minutes, flipping halfway through.

5. While the sweet potatoes are cooking, preheat the grill to medium high heat and remove the pork from the refrigerator.

6. Grill the pork medallions for 4 minutes per side, or until the internal temperature of 145 degrees F.

7. Rest the meat for 5 minutes.

8. Create the burgers by placing a piece of pork on top of a sweet potato round. Add your preferred toppings, then top with another sweet potato round.

9. Serve Immediately. Enjoy!
