Mexican Pork Stew

RECIPE INGREDIENTS

1 tbsp ghee
1 lb Pederson’s Farms Pork Stew Meat
1 green bell pepper, chopped
1 onion, chopped
3 garlic cloves, minced
1 tbsp chili powder
1 tbsp smoked paprika
1 tsp cumin
1/2 tsp ground oregano
1/2 tsp sea salt
1/2 tsp ground black pepper
1/4 tsp cayenne pepper
2 cups diced sweet potatoes
2 cups chicken broth
1 can of
28 oz diced tomatoes

Additional Toppings:
chopped cilantro

jalapeno slices, 
lime wedges

RECIPE DIRECTIONS

1. Heat ghee in a large Dutch oven or pot over medium high heat.

2. Add pork and stir cooking for 5 minutes until browned.

3. Add bell pepper, onion, and garlic, then stir for 2 minutes until fragrant.

4. Stir in chili powder, smoked paprika, cumin, oregano, salt, pepper, and cayenne pepper for 1 minute.

5. Add sweet potatoes, broth, and diced tomatoes. Stir together.

6. Cover, then simmer for 30 minutes at medium low heat.

7. Serve warm, garnished with cilantro, jalapeño slices, and lime wedges.
