How To Make Keto Pancakes


  • 6 large eggs
  • 2 c. dairy free milk
  • 6 tbsp oil (olive, avocado, coconut, or ghee) plus extra for greasing the pan
  • 4 tsp apple cider vinegar
  • 1 Package of Legit Pancake Mix


  • Preheat your skillet or griddle to medium/high heat (much lower if using a cast iron)
  • Whisk together all the wet ingredients in a medium bowl
  • Slowly add in the full contents of the Legit Pancake Mix and wish thoroughly, use and immersion blender for optimal results.
  • Now add a tbsp of additional fat to your preheated griddle and spoon a scant ¼ cup of batter (around 3 tbsp)
  • Flatten the batter a bit so it will cook through and allow it to cook for up to a minute on the first side before flipping
  • Use a flexible spatula to to flip your pancake and repeat until all the batter is used
  • Consider add-ins like a cup of dairy-free chocolate chips, nuts, or shredded coconuts
  • If you wish to make half the mix reduce all other ingredients by half as well
  • Refrigerate for 5 days, or freeze for later
