Ingredients

    For the meat:
  • 2-3 lb Pork Boneless Shoulder Roast
  • 1 tsp garlic powder
  • ½ tsp cumin
  • ½ tsp salt and pepper (or to taste)
  • 1 small white onion (sliced)
  • ¾ red onion (sliced)
  • 2 cups chicken bone broth (compliant)
  • For the salsa:
  • 1 mango
  • 1 small red bell pepper
  • ¼ red onion
  • ¼ bunch of cilantro
  • For the "taco" shells:
  • 1 Butternut squash

Instructions

    For the meat:
  1. Turn insta pot on “saute” setting
  2. Mix seasonings and coat the roast
  3. Seer each side for 2-3 min
  4. Turn the pot to “manual” 20 minutes
  5. Add in the onions and broth
  6. Cover and let cook
  7. When finished let it naturally depressurize
  8. For the salsa:
  9. Finely dice all ingredients
  10. Mix together and set aside
  11. For the "taco" shells:
  12. Peel skin off the squash using a potato peeler
  13. Turn squash on its side and cut into thin rounds
  14. Place them on a foil lined baking sheet
  15. Brush them all with olive oil and sprinkle with salt
  16. Cook on 400* F for 20 min
  17. Let cool and serve them under a pile of delicious meat and topped with salsa!
