Chorizo Scramble

Try this Chorizo Scramble… brown the Pederson’s No Sugar Chorizo over medium heat.

  • 4 slices of Pederson's No Sugar Bacon
  • handful of lettuce or spinach
  • 2 Eggs
  • for the dressing
  • 1 garlic clove
  • 1 tbsp dijon mustard
  • 2 tbsp red wine vinegar
  • 3 tbsp olive oil


  1. Cook bacon
  2. Boil eggs, peel, and cut in half
  3. Chop lettuce or spinach
  4. For the Dressing
  5. mince the garlic
  6. add a touch of salt and work into a paste
  7. add garlic dijon and red wine whisk well
  8. slowly add the olive oil to the mixture continuing to whisk
  9. pour over salad and enjoy!
