Hickory Bacon Stuffed Deviled Eggs

Use Pederson’s Natural Farms Hickory Smoked Bacon for the perfect Stuffed Deviled Egg!

Time: 30 minutes
6-8 slices Pederson’s Hickory Smoked Bacon
1 cup (more or less) Miracle Whip
4 T. Mickey’s Mustard
2 T. Reserved Bacon drippings
In a medium frying pan over medium-high heat, cook 6-8 strips bacon until crisp and brown. Drain on paper towels; crumble when cool.
Set aside 2 T bacon drippings. Shell 12 cooked eggs and half lengthwise. Put yolks in a bowl and, with a fork, mash in reserved bacon drippings, Add 4 T. Mickey’s Mustard, and GRADUALLY (you do not want your egg yolk mixture runny) Ad 1 cup Miracle Whip. Add salt and pepper to taste.
Add 1 teaspoon of Egg yolk mixture to each of the egg whites (coating the inside edges), Add several crumbles of bacon, and then top with remaining yolk mixture.
Top eggs with flat leaf parsley, paprika, or a piece of sliced olive.

Bake It: Heat oven to 350 degrees. Place wire racks on a jelly-roll pan. Arrange a single layer of bacon on the racks and bake to desired crispness, 15 to 20 minutes. No need to turn the slices!
